Simple Refrigerator Oats-2 Ways
Need some quick and easy breakfast inspiration? I have one recipe, two ways that will be a great addition to your breakfast repertoire.
Keeping a family fed is a huge part of being a mama, at least in our home. The planning, shopping and preparation of the food is up to me for the most part and it’s up to me how to spend our food budget and make it stretch. This can be quite the challenge at times.
As the years go by, my children are eating more every day and our food costs have now exceeded our mortgage payments. They’re not even teenagers yet. Yikes!!
I feed my family with healthy, homemade food…most of the time. We eat a lot of fresh fruit and vegetables, and I have cut way back on meat and incorporated a lot of beans and lentils. We also eat a lot of eggs.
Years ago, I cut out boxed cereal as it wasn’t filling enough or cost effective. Our breakfast meals consist of a lot of egg dishes, oatmeal, homemade granola, homemade pancakes, waffles or muffins. Items that are wholesome and fill them up!
This last year I finally started experimenting with making refrigerator oats. Oh man, they are a hit!! I can’t believe I didn’t try them earlier. The kids love them and it keeps them full.
I have been working out 2 different flavours and have come up with recipes for them.
One is an Apple Pie flavour and the other is Coconut Banana Nut. The nice thing about these recipes is that they can be adjusted quite easily. You can add pretty much whatever you want to “bulk” them up a bit more; more fruit, nuts, applesauce...whatever.
One reason I had avoided refrigerator oats is because I thought they HAD to sit overnight and I wasn’t always prepared the night before. I was wrong. I have found that even letting them sit in the fridge for about 30 minutes is enough. In fact, I prefer it personally.
