The Best Coconut Carrot Ginger Squash Soup
Nothing says Fall like warm, cozy sweaters and scarves, sunshine with a slight chill to the air and pumpkin lattes...I finally had my first one! I know, I'm a little late coming to the party.
With Fall also comes comfort food. Mmmmmmm...soups, stews, warm curries on rice, casseroles, hot, delicious drinks...oh my! I always seem to write about food when I am hungry!!
I'll keep this brief because obviously I need to go eat ;)
There is something about a creamy, carrot soup that I love, but it has to have the right flavour. For me that involves, curry, ginger, coconut milk...see!? Here I go again!
Last Fall I was given a couple of butternut squash. Squashes? Squash's? Just squash? Anyways, you know what I mean.
I really enjoy butternut squash in many forms, but my family? Not so much. They are really good eaters, most of the time, but this is one food item that one child in particular is very leery of, even if it looks like it could be squash, he avoids it.
Not one to let food go to waste, I made it my mission to create a delicious soup that he wouldn't even notice had squash in it.

Here's a tip though, while it's really good fresh, it's even better the next day after it's had time for the flavours to meld together.
