Crockpot Meals are AWESOME !! I love finding or creating amazing recipes that I can make ahead, freeze, dump in the crockpot and serve for dinner. My favourite crockpot meals are the ones that are a complete meal, but I don't add all of the veggies before freezing...unless they're pre cooked. The reason for that...as I learned the hard way...is that certain veggies don't freeze very well when they are fresh and I really can't be bothered to blanch them ahead of time. Let's just say I had a bad experience with carrots and potatoes. I ended up with weird textured carrots and potatoes that nobody ate. At least that was my experience. So instead, I write on the freezer bag what the meal is and any ingredients I want to add later to make a complete meal. I have found baby potatoes and baby carrots are great for adding later without adding extra work. Put them in the slow cooker with the rest of the meal and ta da, you're good to go.

Please keep in mind these are larger recipes and feed my family of 6 (who eat like a family of 8). If you have a smaller family and cook the amount suggested, you will probably end up with leftovers. Cook once, eat twice !! Working smarter, not harder ;)
