I did something a little crazy today...ok, well at least crazy for me. I did something without planning !! GASP!! I know , right !? For me that is HUGE. What I did was a bunch of freezer meals without a plan. I don't usually recommend doing freezer meals this way, but today I was feeling adventurous. I think it was the feel of Fall in the air today.
I love creating meals out of what I have on hand so that's what I decided to do for the freezer meals, except I needed a few things that I did NOT have on hand :( Who runs completely out of onions and doesn't notice...!!?? Apparently me. Turns out I did need a few things like onions and tomatoes sauce, but I did good and used up a bunch of stuff I had on hand. It is such a sense of satisfaction afterwards...at least once the dishes and clean up are done. Unfortunatley I still have to do those. Sigh :(
Once everything is made and cleaned up, I have to actually convince myself to use them. Am I the only one that has a hard time "parting" with the meals created on a huge cooking day !? HA !! Isn't that the point ? Yeah, I know, I'm strange ;)
This is what I ended up with at the end of the day:
2 Beef Bacon Ranch Chicken
1 Italian Chicken
1 Quinoa Beef Chilli
1 Pizza Casserole
1 Black Bean and Beef Soup
2 Quiche (1 Beef Bacon/Potato, Vegetable and 1 Vegetable)
40 Hawaiian Meatballs
30 Mini Meatballs for Roasted Tomato Soup
3 lbs Cooked Ground Beef to have available
Salmon/Corn/Potato Chowder (Did not freeze this, made for dinner)
Buffalo Potatoes (For Buffalo Chicken and Potato Casserole later)
2 Mock Cabbage Roll Casserole
Not bad for a spontaneous cooking day !
I love doing freezer meals and crockpot meals, but I usually plan for it well in advance. I have done quite a bit of both and find them so helpful with the chaos that is life. This was a fun experiment to see what I could use up and come up with without actually planning for it. Turns out I had lots of food to work with ! I'm putting together a list with links to my fav's as well as some freezer meal ideas/tips. They have been an absolute lifesaver for this busy, homeschool mama.
